How do you serve smoke without it touching the drink?

With a double container. The fog is water vapour in the air, condensed by the cold: the dry ice goes in the outer container and never touches the drink.

  1. 01Glass with the drinkThe only thing that reaches the mouth.
  2. 02Outer containerWith a little warm water and a few 3 mm pellets, added with tongs.
  3. 03The fog fallsIt’s heavier than air: it spills over and runs down the sides.

3 mm or 16 mm? It depends on the job.

For the effect

3 mm pellets

Make fog instantly, just as the plate or the glass reaches the table. For cocktails, plating and presentations.

For cooling

16 mm nuggets

Last longer in the box. For keeping the bar, a buffet or desserts cold through the service.

Questions from bars and restaurants

How much dry ice do I need?

For fog, as a guide, a bar or an event uses 15 to 20 kg. For a whole weekend it depends on how many services you run with the effect: tell us how many and we’ll work it out for you.

How long does it last in the box?

It depends on the temperature and how often you open it. Order it for the day you’ll use it and keep the lid on between uses.

Can I serve a drink with the pellet inside?

No. Dry ice must never be eaten or drunk. The effect is always made with a double container, so it never touches the drink.
